Discover the essence of traditional Japanese cuisine at this elegant, contemporary restaurant in the iconic Ritz-Carlton, Tokyo. Ingredients are sourced from across Japan, wherever the best quality is available at the time, to provide truly seasonal dishes all year round.
The interior embodies a harmony of Japanese and Western cultures by featuring Japanese calligraphy paper and ink as well as Japanese materials to build a contemporary room in light and shadow. The restaurant is divided into four areas (kaiseki, sushi, tempura, and teppanyaki) with three counters (sushi, tempura, and teppanyaki) and eight chefs’ tables. As they take their seats, guests are greeted with breathtaking cityscapes of downtown Tokyo via floor-to-ceiling windows.
The dining space is a mix of modern and traditional Japanese design, mainly defined by traditional Japanese furniture accented with contemporary details, such as metal lattice and screens. The space is complemented by four private and semi-private rooms for special occasions, including a Kokushoan (ceremonial tearoom) rebuilt from a traditional house in Gifu. At Hinokizaka, guests are invited to sit back and enjoy meals and stunning views in a comfortable setting.
