A real Edomae-style sushi restaurant in Roppongi ideal for international guests, where the owner’s spirit shines

Roppongi, Tokyo, is well known as a battleground for famous restaurants.

Isana, an eight-minute walk from Tokyo Metro Roppongi Station, is a sushi restaurant located on the first floor of a hotel and residential building along Roppongi Street near Roppongi Hills. Entering from the side of the building, guests are presented with a modern glass facade, the soft light from the entrance emanating, and a plate with the restaurant’s name greeting all.

The owner, Junichi Onuki, has over 10 years of experience in sushi and Japanese restaurants in England after starting his career as a chef in Japan. After working at Zuma, a globally expanding Japanese restaurant, he returned to Japan and opened Isana in October 2012.

Onuki worked at a sushi restaurant in the Grand Hyatt Tokyo in Roppongi Hills before becoming independent after returning to Japan. It’s close to the current location of Isana, which was chosen as a place where Onuki could fully demonstrate his experience abroad. With this location and his background, Isana attracts many overseas clients. Based on his experience, tuna is purchased from one of the top five restaurants in Toyosu Market through a go-between broker, with the intent that his guests will be able to experience real Edomae-style sushi. The vinegared rice is made by using No. 194 rice, which is loosely loosened and has little stickiness, with Chiodi rice vinegar as the base, accented with red vinegar.

The drinks that go with sushi are sake and wine. The restaurants always offer seven to eight varieties of sake, and around 15 kinds including seasonal sake, mainly Tohoku sake, that pairs well with sushi. A full sake pairing is also recommended. For wine, Isana has carefully selected wines, such as Kenzo Estate.

The contemporary interior seats eight guests at the counter, with a table for up to four diners. Ideal for dates and anniversaries, the restaurant is also perfect for entertaining guests and for family gatherings with children. In particular, the service of international guests will be fulfilling, as the owner Onuki's career is fully demonstrated.

The name of the restaurant, “Isana”, means small fish; here, it's fun to share a little happiness with family and close friends. Guests can enjoy authentic Edomae-style sushi in comfortable surroundings at Isana.
