A 1-star innovative French restaurant in Otemachi helmed by a starred chef who takes inspiration from Japan’s unique terroir

A contemporary French restaurant, est opened in September 2020 atop the Four Seasons Hotel Tokyo at Otemachi, a five-star hotel directly connected to Otemachi Station in Tokyo’s business district. They serve innovative and contemporary French cuisine inspired by their deep knowledge of terroir in Japan. And in the 2022 edition of the Global Gourmet Guide, the chef de cuisine of the one-starred est, Guillaume Bracaval, and his team not only provide guests with memorable, high-quality dinners, but also organize and operate menus that are always environmentally conscious.

Born and raised in a small village in northern France, Bracaval was greatly influenced by his garden and farm. From an early age, had a love and respect for food making and was delighted to see mother kneading, mixing, roasting, baking bread and sweets in the kitchen. This became the foundation for his later career. His childhood passion for food and cooking led him to Paris, where today Bracaval serves innovative French cuisine at the "est" of the Four Seasons Hotel Tokyo at Otemachi, inspired by his deep respect for Japanese terroir ingredients. Brakavall himself visits various parts of Japan and does not compromise on the supply of food for his kitchen, including fresh fish caught by fishermen in Kyushu and more than 50 types of citrus grown on farms in Wakayama. The menu at "est" is made with plenty of seafood and mountain produce, and is a wonderful blend of French techniques and Japanese craftsmanship.
The restaurant received the Award of Excellence at Restaurant Awards 2022, presented by globally influential Wine Spectator of the United States. The est has a selection of over 400 wines, with a particularly large selection of domestic wines made in Japan. The sommelier team will select your own special wine according to your taste and food from a wide wine list including French and New World vintages.

The restaurant's interior is decorated with classic French and Japanese elements, with attention to detail in materials and traditional craftsmanship, creating an elegant and The restaurant offers 72 seats at tables in a refined space.
