Trader Vic's Tokyo is located on the fourth floor of the Garden Tower of the Hotel New Otani in Kioicho, Chiyoda-ku, Tokyo. This is the Tokyo branch of Trader Vic's, which operates branches worldwide based on the concept of Taste The World.
The Executive Chef of Trader Vic's Tokyo, which opened in 1974, is Masato Hamada. He was the youngest executive chef at Trader Vic's main restaurant and has been active around the world. He oversaw the opening of seven branches including Chicago and Saudi Arabia before becoming Executive Chef of the Tokyo Branch.
A two-meter high barbecue oven called the "magic wood-fired oven" is found in each branch around the world. The cooking method is characterized by smoking with radiant rather than direct heat resulting meat and fish that is more aromatic. The signature dish, spare ribs, is known to have been a favorite of American entertainer Frank Sinatra.
The founder, who had been researching rum, invented the "Mai Tai" tropical cocktail in 1944. Trader Vic's Tokyo serves about 80 original cocktails, including the "Original Mai Tai".
With 120 seats in the dining room and 100 seats in the adjacent bar, the restaurant is designed to resemble life on an island, and the overall lighting is dark and gentle, creating a moonlit ambience.
