Although he casually describes it as “an ordinary sushi restaurant,” his remarkable culinary skills can be inferred from an array of renowned restaurants where he trained, such as Fukukizushi in Osaka and a five-star hotel in Kyoto. The chef visits local markets every morning to select and purchase the best ingredients of the day. In addition, the trust based on his long-lasting relationships with suppliers allows him to purchase fresh tuna from a broker in Toyosu, and sushi rice from a farmer in Okayama.
Inside the restaurant, the counter made of over 160-year-old solid cypress welcomes guests, and the vintage tableware selected by the chef is a delight to behold.
