Sukiyabashi Jiro Roppongi, which has had its doors open in Roppongi Hills at the center of the redevelopment of the international city since the grand opening of the complex in 2003, is a branch of Sukiyabashi Jiro, a renowned sushi restaurant in Sukiyabashi, Ginza.

The Roppongi location, which has been awarded two stars in a restaurant guide, follows the main location’s concept of competing on the quality of its sushi and adheres to the no-longer-popular, restrained practice of offering no dishes other than sushi and beer and Japanese sake (one label each).

The branch location is helmed by Chef Takashi Ono, who was born in 1961 as the second son of Owner-Chef Jiro Ono of Sukiyabashi Jiro and apprenticed himself at the age of 19 to his father acclaimed as a sushi chef. During the apprenticeship, he learned not only culinary skills but also attitudes toward sushi from his father. Then, at the age of 42, he was certified to be skilled enough to open his own restaurant. According to Chef Jiro Ono, his second son was “trained stricter than any other apprentice.”

The sushi is made exactly to the recipe of the main location. The same goes for the sushi rice, the sourish sushi vinegar, and the temperature controlled to store sushi toppings. The ingredients are also sourced from the same mediator that has procured high-quality ingredients from Toyosu Market for the main location of Sukiyabashi Jiro for years. The fact that only the best ingredients of the day are delivered from all over Japan is proof of the mediator’s good judgment. The mediator delivers the same fish, nori seaweed, tea, and rice to the main and branch locations. The long-standing trust allows the branch location to offer high-quality sushi worthy of the name “Sukiyabashi Jiro.”

Sukiyabashi Jiro Roppongi offers a prix fixe (fixed price) menu where sushi is served in a typical order (starting with lightly flavored seafood, such as flatfish, and followed by shellfish, bluefin tuna, blue-skinned fish, and grilled seafood) so that sushi lovers can focus on the sushi.

With warm wood accents, the simple interior designed after the main location also allows diners to focus on the sushi right before their eyes. Any of the eight seats at the counter allows guests to enjoy sushi to their heart’s content. Guests from abroad are also welcomed by the chef, who speaks English and Chinese. Thus, Sukiyabashi Jiro Roppongi is the perfect place for sushi lovers. Please enjoy their authentic Edomae sushi.

    We went there for sashimi and sushi lunch course. The food was great, we could see their hard work behind every serving. We really like how they serve their saba, the taste was very refreshing. It went well with their vinegary rice. Ono san shared his knowledge about sushi with us. He also handled some picky customers who probably had limited quality sushi experience in a very professional way. Clearly recommended for true sashimi/ sushi lovers.
