A new branch of Mitani opened to demonstrate evolutionary cuisine and profound culinary skills

Kioicho Mitani, a popular branch of Mitani, a restaurant in high demand in Yotsuya, Tokyo, opened its branch on the same floor of the same building, Tokyo Garden Terrace Kioicho, on September 2, 2021.

This new branch is helmed by Chef Eiki Honda, who has been pursuing a career in the culinary arena for more than 20 years. He served as an apprentice to Yasuhiko Mitani , the owner of Mitani, when his master was a chef at Sushi Rozan Shinjuku Isetan Main Location. Subsequently, he was assigned to Kioicho Mitani as a sous chef in 2018 and is currently assigned to Kioicho Mitani Bettei.

The concept of Kioicho Mitani Bettei is to offer evolutionary cuisine and profound culinary skills. It was founded based on the desire of Chef Mitani to showcase the profound skills of his apprentice. The restaurant is also intended to offer a combination of sushi made of quality ingredients carefully selected from around Japan and wine and Japanese sake just like Kioicho Mitani. “We pay attention so that seafood rich in amino acids will pair well with rice and vinegar comprised of a perfect blend of enzymes,” Chef Mitani says. The seafood is sourced from Sasue Maeda Fish Shop in Yaizu, Shizuoka, which has garnered trust by preparing fish to fit the needs of each chef, while the tuna is purchased from Yamayuki. The rice is selected by Chef Honda with advice from a rice expert. It is a blend of freshly harvested Koshihikari rice from Niigata and Shimane, both grown to taste similar to aged rice (in other words, they are produced to have the same level of water and sugar content as that of aged rice).

The food and beverage pairing menu is a signature of Mitani. The new branch also offers a selection of Japanese sake and wines curated with support from a dedicated sommelier to fit the season and available ingredients, including Juyondai and other Japanese sake as well as white wines from Burgundy, red wines from Bordeaux and Burgundy, and sweet wines.

Inside the restaurant, there are two dining rooms, each with a six-seat counter. They are designed to look like a futuristic tea room based on the interior concept of Mitani, which represents the spirit of tea leading to world peace. The counters are made from part of the more than 400-year-old hinoki cypress tree worshipped at Mitsumine-jinja Shrine in Chichibu, Saitama.
