An original and innovative restaurant in Ebisu by an up-and-coming chef who knows the cutting edge of Europe

A 4-minute walk from JR Ebisu Station. Ebisu is known as a fiercely competitive area with many unique and famous restaurants. H-acca- has a unique presence in Ebisu, which is just such a place. The restaurant opened in Kagurazaka in 2020, and its modern and beautiful cuisine, which goes beyond Italian cuisine, won many fans among foodies. The restaurant moved to Ebisu and increased the number of seats from six to 10, offering a new world view.

Chef Tetsuya Horie was born in 1988. His father is a French chef, and he has been interested in cooking since he was a child, learning to cook from him. After apprenticing in Tokyo, he went to Italy and worked at restaurants in Italy and other European countries. He trained for a total of four and a half years at the three-star Le Calandre (Veneto) and two-star Agli Amici (Friuli) in Italy. Among them, Le Calandre is one of the most famous restaurants in Italy known for its novelty and originality, but also for its traditional Italian cuisine. H-acca- fully expresses Chef Horie's sensibilities, having absorbed essence and spirit of these two restaurants.
The dishes are innovative, based on Italian cuisine, and express the essence of the food in European countries. The ingredients are directly delivered from producers all over the country that Chef Horie has picked out. The specialty is ostrich cuisine. It is always served, even when the course menu changes. In addition, other ingredients with the ultimate in umami, such as soft-shelled turtle and shark's fin, are lavishly used, giving the dishes a sense of exhilaration and the unusual.
The wine list is centered on Champagne and Burgundy, and non-alcoholic teas from Japan, China, and Taiwan are also available. In addition to bottled drinks, the restaurant offers drinks by the glass to match the food.

The restaurant has a calm and chic atmosphere with natural wood used tastefully throughout, and an L-shaped counter with 10 seats. This is a great place to visit on a date or anniversaries and other special days, or even with food lovers. It is a cuisine that defies genre and cannot be found anywhere else.     We had an excellent experience at H acca! The sommelier and chef was very serviceminded and made us feel welcome and at home. We got stories and information for every course; who grew the vegetables, where was the deer shot etc. It added another dimention. The meny consisted of ten dishes, ranging from ostrich to wasabi with some mackerel and shitake in between. The lambdish was the winner for us this evening. What really stood out for us was the chefs fockus on the produce. It was wery little seasoning, the vegetables and meat got to shine by themself. The one drawback we have, and this is of course personal preferance; The portions was maybe a little to big. When we were at the 5th or 6th course we were getting full. Then you really dont apreciate the dishes in the end as much as you could have. The winepairing was really good. The sommelier had carefully chosen wines that matched the dishes excellent, and he was not afraid to take chances. we had orange wine, canadian wine and several good wines from small producers in Europe. All in all awonderful evening and highly reccomended
