Budoonomori, a pioneer French restaurant in Ishikawa Prefecture, has its main location in Iwademachi, Kanazawa City, a 20-minute drive from JR Kanazawa Station. Restaurant Budoonomori Les Tonnelles is located on the premises of the main location, along with a wedding chapel, a coffee shop, a pastry factory, vineyards and plantations, to allow visitors of all ages and for all purposes enjoy food together. In particular, Restaurant Budoonomori Les Tonnelles plays a core role, characterized by its unique architecture converted from a greenhouse with a domed roof made of paper tubes by a renowned architect, Shigeru Ban. Inside the greenhouse, the ceiling is covered with real vine leaves, through which bright sunshine pours in to add a sense of openness.
The chef is Marco Santoscoy. Born in Mexico, he gained experience at restaurants in Argentina, Napa Valley, Scottsdale, and other places in the United States, where he developed an interest in Japan. His desire to "see Japan with my own eyes, where there are many things that resonate with my own sensibilities" grew stronger, and he moved to Japan in 2016. He was fascinated by the abundance of food, beautiful nature, and warm-hearted people, and later moved to Ishikawa Prefecture. He is now pursuing a new style of French cuisine that weaves together inspiration from his own culture and the bounty of nature in this region.
Meanwhile, the drink menu curated by Chef Sommelier Daigo Fukushima to match the food is immensely popular. In particular, food and soft drink pairings are highly recommended by various sources.
The spacious greenhouse is comfortably furnished with eight tables and allows guests to enjoy walking around. They are offered an amuse-bouche and a beverage at the entrance and another delicacy at the chef’s counter before they are seated at the table to start their meals.
