A five-minute walk from Yodoyabashi Station on the Osaka Metro Midosuji Line and the Keihan Main Line, Hinabe Mita Yakuzen Natsume Kitahamahonten sits in a busy business district. The restaurant opened its doors in March 2022 as a sister restaurant to hotpot specialty restaurants, Hinabe Mita in Tokyo and Hinabe Seito in Osaka.
Hinabe Mita Yakuzen Natsume Kitahamahonten is helmed by Chef Masayuki Fujii, who displays his culinary skills in the open kitchen behind the counter on the first floor. Sharing the concept of traditional authentic Sichuan hotpot with Hinabe Mita and Hinabe Seito, Yakuzen Natsume also offers healthy herbal cuisine. The food and drink menus are deliberately designed to provide energy to busy city dwellers, especially working women.
For example, Yakuzen Natsume offers hotpot meals designed to promote detoxification, appetite, and recovery from fatigue, such as one featuring shark fins and other collagen-rich ingredients to make the skin healthy and radiant and one featuring mushrooms to enhance the immune system. The ingredients not available in Japan are imported from China. The specialty rice is mixed with mannan (the main ingredient of konjac) to reduce the sugar content by 20%.
The drink menu includes jujube wine, as implied by the restaurant’s name (Natsume means jujube in Japanese). Flavored with jujube, the wine is reminiscent of sangria. The wine list mainly consists of natural and bio wines that go well with the herbal cuisine. The soft drink menu is also extensive, including flowering tea which beautifully blooms in the teapot.
The dining room on the first floor is furnished with a counter (with eight seats), and the dining room on the second floor with tables (seating up to six guests during lunchtime and eight to ten guests during dinnertime). The tableware is selected from the perspective of environmental sustainability, such as 60% recycled lunch plates, bamboo chopsticks, and recyclable paper wet towels.
