A sushi restaurant in Matsuyama, Ehime, that offers sushi and delicacies to celebrate the bounty of the Seto Inland Sea

Perched on the third floor of a building on a side street a few blocks from the busy downtown part of Matsuyama City in Ehime Prefecture, Sushi Takayama, a secluded restaurant helmed by Chef Dai Takayama, offers sushi and delicacies to celebrate the bounty of the Seto Inland Sea.

The chef of local origin completed his four-year rigorous apprenticeship at a one-star restaurant, Sushi Ino, in Ehime Prefecture before he opened his own restaurant named after himself, Sushi Takayama, in June 2018.
The carefully selected fish and shellfish are not only sourced from local markets but also delivered directly from brokers in rural markets so that guests from outside the prefecture can discover the bounty of the sea in Ehime. Chef Takayama even goes to fishing ports for fish not available in the market. The oval squids, summer grunt, and winter spotted mackerel processed by Shota Hamada from Marutetsu Suisan in Ainan and transformed into sushi toppings are especially appreciated by guests. The tuna is sourced from Yunoka, a popular broker, in Toyosu Market. The sushi rice is made of Tsuyahime rice from Yamagata, seasoned with a blend of one rice vinegar and two red vinegars for a slightly sweet and acid note, and kept at different temperatures depending on the topping.
The sake list always has some 20 labels from around Japan, including locally brewed sake from Ishizuchi Sake Brewery in Ehime. Meanwhile, the wine list offers 10 champagnes and whites, all by the bottle.

When you go through the entrance doors into the restaurant, you will be welcomed by double-faced, red shoji screens (paper sliding door) in bright light. Behind the noren curtain (shop curtain) is a sophisticated dining room with a cypress ceiling, a nine-seat counter made of solid ginkgo wood, and warm wooden elements. Enjoy a variety of dishes available only at Sushi Takayama in Matsuyama City, Ehime, with your family, partner, friends, or colleagues.
