Takashi Anezaki, owner of Ryouriya So, a Japanese restaurant in Sapporo City, Hokkaido, opened KOUUNRYUUSUI NISEKO in response to guests’ requests to offer sushi and fresh ingredients only in winter.
To satisfy guests visiting Niseko, he closed Ryouriya So in winter and started a pop-up restaurant in Niseko in winter from 2018. From 2019, he has stayed in Niseko for a limited time from December to early spring every year to entertain guests from Japan and all over the world.

The cuisine offered is centered on Hokkaido ingredients, with one carefully selected course, the "Sushi Course 36,300 yen (including tax and service charge). KOUUNRYUUSUI NISEKO definitely encourages you to try dishes using the popular live crabs, which can be included in the courses. Depending on the day, it is also possible to savor King crabs, Snow crabs, and Blue King (Hanasaki) crabs (advance reservations required).

The restaurant has a counter seating six guests and table seating four. It also features a large aquarium with seasonal crab and shellfish.
The restaurant’s name, KOUUNRYUUSUI, comes from an ancient idiom describing the way clouds move by letting nature take its course. When you are in Niseko, be sure to visit KOUUNRYUUSUI NISEKO, where you can fully enjoy the blessings of the seas while in the mountains with the owner’s creative cooking, and enjoy a blissful time.
