An innovative 2-star French restaurant in Ginza that lets you sense the mistral wind of Southern France

Ginza, the glamorous heart of Tokyo. ESqUISSE is located along the refined Namiki-dori Avenue, a one-minute walk from Tokyo Metro Ginza Station. It has continued to receive a solid reputation since its opening as one of the best grand maisons in Japan. By day, sunlight fills the windows, and by night, the glittering lights of Ginza transport guests to the culinary world of mistral, the Mediterranean wind.

Lionel Beccat is the Executive Chef. He was born in Corsica, France, where he was exposed to many arts, including music and painting, from an early age. He entered the culinary profession after the age of 20, working as a sous chef at the three-star Maison Troisgros restaurant in France. He was appointed chef and came to Japan at Cuisine [s] Michel Troisgros in Tokyo when it opened in 2006. He served as executive chef for five and a half years before being appointed executive chef at the opening of ESqUISSE in 2012. Just after opening in 2013, ESqUISSE was continuously awarded two stars by a world-renowned gourmet guidebook. In 2018, he received the “Chef of the Year Award” and was recognized for his unique cuisine that utilizes Japanese ingredients. In 2011, he was awarded the “Grade de Chevalier Dans L’ordre Du Merite Agricole” (National Order of Agricultural Merit on France).

Born in France and living in Japan, he prepares French cuisine while applying the blessings of Japanese culture, weather and nature. The cuisine that is born from Chef Beccat’s unique resume is light and innovative. This is because he is constantly thinking about what it means to make French food in Japan, despite being born and raised in France. As a result, the cuisine is innovative yet simple, as if the swaying of Japan’s four seasons were directly on the plate. Rooted in French techniques and traditions, but inspired by Japanese nature, the cuisine has become the unwavering character of ESqUISSE.

Next the wines selected by the sommeliers, including General Manager Eiji Wakabayashi spectacularly support Chef Beccat’s cuisine. In 2023, Mr. Wakabayashi received the “Best Sommelier Award” from a restaurant guidebook originating in France. He makes frequent media appearances as a top sommelier in Japan. There is an expansive selection of wines, mainly from France, but also from Italy and Japan. Alcohol pairing is also available.

The restaurant, with a chic and relaxed white interior, has 34 seats at 12 tables and a private room for up to 12 people. The walls are finished in the image of the earth by plaster artisan Naoki Kusumi. White walls and white tablecloths complement the light dishes on the plates. ESqUISSE is French for sketch. Please experience a unique space where unbounded and free sensibilities seem to spread horizontally and vertically on a white canvas.
