Domestic meat used ranges from the rare short-horned Wagyu beef brand "Iwate Yamagata Village's short-horned beef" to chicken and pork, all directly from their producers. The seasonings, which play a crucial role as supporting characters for the dishes, are all organic and safely cultivated. Yamafuji is in essence, like a food evangelist, delivering ingredients full of passion of the producers to those who eat.
