Asahi Shuzo, famous for the sake "Kubota", opened this establishment as their flagship location in 2015, the 30th anniversary of sake "Kubota". The location is in the center of Japanese food culture, Ginza, a five-minute walk from JR Shinbashi Station or Ginza Station on the Tokyo Metro Ginza Line.

Guests can enjoy carefully curated sake and side dishes made with ingredients selected from across the country, including Niigata, for an experience unique to an establishment run directly by a brewery. Guests can also enjoy the changes in flavor and aroma brought about by variation in temperature, which is one of the charms of sake "Kubota".

Tasting and comparing various brands at different temperatures is an opportunity to experience facets of sake, such as its crispness and pleasant aftertaste, as well as the true umami (the fifth taste, a pleasant flavor) and elegant aroma of rice. The flavor changes not only with the sake's temperature, but also with different drinking vessels. By changing the vessel along with the brand and temperature, guests can enjoy the transformation of the smoothness of the flavor and the aroma. The food is chosen for its affinity with the sake "Kubota". The proprietors procure thoroughly screened, seasonal seafood that produced from Niigata, then carefully prepared by artisans to bring out the flavors that pair with sake "Kubota."

    Details: Appetizer, Sashimi, Grilled dish, Simmered dish, Main dish and Dessert.

    Drink for the toast can be chosen from Kansa sake, Japanese sake, beer or soft drink. "Kubota" brand's typical sake tasting set "Hyaku-ju, Sen-ju and Man-ju", seasonal sake, warm (40 degree celsius) Heki-ju will be served respectively in a small volume along with the meal.
