This Edomae-style sushi restaurant opened on April 26, 2017 at Gion, Kyoto. "Gion Sushi Tadayasu" which aims to make sushi restaurants a place of enjoyment, is a store where customers may enjoy Edomae-style sushi made with fresh, locally-sourced ingredients.
Chef Tadayasu Morita's parents were fishmongers, and he had wanted to work at a sushi restaurant since he was a junior high school student. He got cooking license at the same time of graduating high school, and began to work at a sushi restaurant in Tokyo. Despite gaining a lot of experience while working within several famous sushi restaurants in Tokyo, Mr Morita retained his dream of opening a sushi restaurant in Kyoto, and "Sushi Tadayasu" was founded as a result. Using strictly selected ingredients from Tsukiji, Mr. Morita makes his delicious aged-fish dishes. Depending on the type of fish used, one of two kinds of vinegar rice will be applied. One kind of vinegar rice is made using a single kind of red vinegar. The other uses a mix of 2 different kinds, one of which is used for tuna. To maximize the flavor of the ingredients, the portion of the rice is changed accordingly. The restaurant also offers a variety of high-quality sake brewed locally in Kyoto. The sake changes seasonally so that the tastes remain aligned with the different kinds of sushi available.
