A pilgrimage to find the soul of Japanese sake pairings
“Chinjyu no Mori Animism” is the new identity of “Shutoan,” a bar which was revered by Japanese sake enthusiasts and focuses on forging unique marriages of sake and food. Reservations are being accepted exclusively through Pocket Concierge. The name "Chinjyu no Mori" means “A guardian forest” and was historically given to areas which helped maintain the surroundings of accompanying shrines. Chinjyu no Mori Animism has adopted this concept for the name based on the belief that we should revisit a time when we were more thankful to nature.
Bar owner Toshiki Takeguchi’s sake choices are based on those brewed specifically to pair well with cuisine, and those confidently brewed in a style which is unaffected by changes in trends. Across the entire country, 250 brewers were deemed to meet the set standards, and 4,000 bottles were then selected from the ranges available. Chinjyu no Mori Animism’s courses each combine one dish from a range of cuisines with a 90cc glass of sake carefully paired to be an ideal match. The range of brewers includes some very well known brands, as well as some that you should keep you eye on in the future!
Chinjyu no Mori Animism’s courses are also unique in the way that they are created to enhance, alter, or even remove scents and tastes based on the individual preferences of each guest. A prime example of this is in the “Niratama” course which originated while the bar still operated under the name Shutoan. For this course, the sake is specially paired due to the unique way in which it helps to bring out the delicious flavour of the egg within the dish. Seasonal ingredients such as manganji peppers mean that no two visits are the same, whilst year-round seafood dishes also have their own seasonal variations including Japanese sweetfish (“ayu”) and pike conger during the summer.
Upon arrival at Chinjyu no Mori Animism, please head down the stairs and press the intercom button so that you may give your name to our receptionist, who will then open the door and welcome you inside. The atmosphere inside is one based around a harmonious ideology, regardless of the size or type of company a guest may be in. A single visitor will enjoy taking their time to enjoy a meal at the counter, while table seats mean groups can enjoy their time together. The center of the bar is home to a large sake cellar, and the table seats are based around those found at a traditional tea ceremony. English and Chinese services are available, with overseas guests extremely welcome within the bar.
