Fresh fish from Hokkaido is delivered by plane. The flavor of both tradition and modern tastes.
This sushi restaurant is in Ginza, but customers can still taste the freshest fishes of the day from Hokkaido. The fisherman in Hokkaido, who was persuaded by the owner, delivered the fish by air everyday, even faster than Tsukiji market get their everyday fish. For an Ezomae-style sushi restaurant, having fresh ingredients is the most important part. They use aged rice from bottom of the World Heritage Shirakami, that is two years old and mix with old-fashion red vinegar. The vinegar rice enhances the taste of the fresh ingredients from Hokkaido. You can enjoy delicious dishes because they are able to get the best ingredients of the seasons.
There was a renewal in May 2017 by interior architect Mr. Takeshi Mizutani, who turned the restaurant into a brand new modern Japanese space. Unlike the previous store, there are art works that present Japan's four seasons and optical fiber that is similar to Hokkaido's map, which is a combination of tradion and modern. The current sushi chef, Mr. Takayuki Takahashi, has been working here after the previous chef, which have worked for 10 years, had left. His sushi is a good combination of tradition and modern.
Chef Takayuki Takahashi gained his experiences at hotel's western restaurants and worked as the head chef of a Philipines Japanese restaurant and worked as the head chef of a Japanese restaurant, which was awarded the best restaurant for six consecutive years. He has international experiences and can speak English fluently. Foreigners enjoy the sushi in a relax atmosphere. For lunch, there is a light menu of sushi and chirashi, and for dinner, a genuine Edomae-style sushi course is served. There are counter seats, table seats, and private room where customers can celebrate anniversaries, business dinner, or family gathering. This is the new type of sushi restaurant where you can enjoy the combination of Japanese tradition and modern senses and the taste by the "five senses".
