The owner chef is Mr. Takamitsu Shimizu, who is the second generation of this restaurant. He grew up watching his father working as a chef and spent five years from 1998 training in "Mikasa Kaikan". In 2004, he took over the restaurant from his father. His cuisine is delicately presented with beautiful colors. His skill is high praised by many professional French gastronomy expert. Now the two generation chefs, Mr. Takamitsu and his father, work together in the kitchen. Mr. Takashi's father focuses on the popular western-style menu since the restaurant opened and Mr. Takashi worked on his original modern French cuisine.
They use foie gras from Landes in France, Challans duck from Burgaud and fresh ingredients from all over Japan such as Hokkaido, Chiba. Each dishes is finished in reminiscent of chef's warm personality. The restaurant utensils are Arita wares from "Kamachi Toho", which is not only famous among Japan's chefs, but also among French chefs. It is an extraordinary dining experience because this is a French restaurant but they use Japanese products.
