“Wish to have a job to express something creative” by owner-chef Mr. Yoshinori Kawasaki. He used to go to music school and doing band activities as a guitarist. At the age of 24, changing the way of expression from music to cooking, and getting into a world of cooking. After he worked at “Restaurant Kinoshita” in Yoyogi, “L’AMITIE” in Takadanobaba, and “Brasserie AUX AMIS” in Marunouchi., he became chief of “restaurant BIOS” which is a farm owned restaurant. In 2014 he set up and opened his own restaurant “Kawasaki”.
From his thoughts of “Enjoy the seasonal nature, and value for once in a lifetime opportunity.”, he values the connection with local producers and takes very seriously about providing best ingredients in the best recipe. During the hunting period, the chef himself hunt, and the store also has a dry aging cellar for the storage. He goes to the farm of a contracted farmer, and harvest every morning. Using local food and cook with thoughts of producers. That is Kawasaki chef’s way.
