Recently there have been many hidden gems popping up in Shintomicho, which has a relaxed atmosphere despite being located close to Ginza and Tsukiji. In an area frequented by foodies and known for expensive restaurants, “Sushi Hashimoto” – which opened in December 2014 – has come to be known as a popular restaurant where you can’t get a reservation.
Restaurant owner Hiroyuki Hashimoto is a young hope for the sushi industry as he became independent at age 31. He grew up watching his parents operate a sushi restaurant in Koriyama, Fukushima, and after moving to Tokyo, Hashimoto spent 12 years training at the famous “Miyako Zushi” (now called “Nihonbashi Kakigaracho Sugita”) in Tachibana-machi, then in Kakigaracho. While inheriting his master’s styles – like always starting nigiri with Kohada (gizzard shad) – he takes advantage of his youth and has continued evolving since opening his restaurant. He uses seafood selected from Tsukiji and makes his sushi rice with a rice vinegar and plum vinegar blend.
The menu offered is only an omakase course and begins with a seasonal appetizer and drink. With fun and unique sushi dishes like black abalone steamed till soft placed on sushi rice mixed with cuttlefish and sauce made from liver of black abalone– thus allowing you to enjoy the seafood more – guests can expect interesting twists from the menu. Hashimoto, as he maintains a thorough work ethic and dedication to the type of ingredients he uses, aims for his restaurant to be “a sushi restaurant where you can enjoy delicious sushi and have a good time”. Often guests feel nervous as they sit in the counter seat of top quality sushi restaurants, however, at Sushi Hashimoto, you can enjoy your sushi in a relaxed way.
The impressive counter will surprise you as you sink into the comfortable chairs with armrests. According to the chef, it is made from cypress wood purchased 16 years ago, and he seems to be using half of the materials used in his parents’ sushi restaurant.
On the shop, a curtain is a family crest, drawn by Hashimoto’s late mother. The restaurant has a warm atmosphere, created by the compassionate chef who values family ties. It is a place where you can have business entertainment, anniversaries and other occasions, and create a lasting memory.
