Chef Tsutomu Nishimura is a pioneer in tea pairing, and is drawing attention from all over the world as guests visit the restaurant to experience “tea pairing aya”. Chef Tsutomu Nishimura was born in a farming family in Tokushima prefecture. Growing up in an environment surrounded by vegetables harvested by his family, the ability to grasp the taste of the ingredients was developed and sharpened. After graduating from vocational school, he opened La Matiere in Odawara city, Kanagawa prefecture in 2007 after working at Trianon of Moriguchi Prince Hotel, Odawara Hilton Resort & Spa, and the like. 7 years later he moved to a new stage in Kyoto and opened MAVO. From his La Matiere days, Nishimura has always placed importance on the feelings of those who produce the food. He endeavors to use only top-tiered ingredients delivered to him from passionate food producers for his dishes and tea. “Lingering effect” is something Nishimura values, and due to his performance of using perfume to add fragrance to his creations, he is called “the fragrance magician”. In addition to fragrance, Nishimura makes good use of music and lighting effects. Here you can experience the atmosphere of a theater as the chef appeals to the five senses.
The restaurant adopts a reservation-only system in addition to offering only lunch and dinner courses that are left to the chef’s whim, allowing guests to share the experience as all courses begin at the same time.
