International & innovative French cuisine using Japanese ingredients
“Cofuku”, opened in August 2017, is located in a quiet area away from the hustle and bustle of the main street and is 7-minute walk from Shimbashi station.
The name of the restaurant means beat on the belly that is originated from a Chinese classic literature , which has the meaning of peaceful situation. Mr. Wataru Akagi hopes that everyone is satisfied with delicious food and enjoys happy time.
The head chef Mr. Wataru Akagi worked at “Tapas Molecular Bar”, in Mandarin Oriental Tokyo and other restaurants in Tokyo Metropolitan area, after that he moved to France. “Le Petit Nice” in France, “MAAEMO” in Norway, “Amass” ,”Kadeau”, and “AOC” in Denmark, and so on, he studied at nationwide restaurants including Michelin-starred restaurants. From his varied career, he creates his own innovative dishes mixing with Japanese food, French food, Spanish food and Scandinavian food. From his thoughts that “Japanese foodstuff is the best in Japan. Even if I cook French in Japan, it is the only imitation of French.” He takes seriously about using foodstuffs and seasoning that is made in Japan, he orders ingredients from all over Japan to use them. However he does not emphasize “Japan” strongly, he provides dishes by using traditional cooking methods and Japanese ingredients with multinational career technique.
The menu covering mainly lunch and dinner course shows only the ingredients like “Shinsyu salmon from Nagano prefecture”, “Pike conger from Aichi prefecture”, and this makes it impossible to imagine how dishes are by just reading it. Dishes are simple, but once you taste it, you can feel deep into the seasons of Japan.
There are 22 seats and there is also a private room for 6 people. The Simple, effective and clean design has a feeling of wiping out the complicated air of daily life, it is good for various scenes up to meals with friends, dinner with clients and date.
