An authentic Japanese restaurant where food lovers gather for the carefully selected ingredients of Hayama.
Hayama, Kanagawa has long been known as a place for luxury villas and second homes. Also famous for tourism, Japanese Cuisine Ichiyo is gaining attention in this area. Yoshimasa Ikeda is the second-generation owner of the restaurant. He took over in 2012 after experiencing under his father during his student days, and followed up by improving his skills in “Ginza Asami” and two-star restaurant “Ryozanpaku” in Kyoto. Guests from not only outside Kanagawa but all over the world visit in pursuit of dishes made from Hayama’s fresh ingredients.
Ingredients include seafood such as octopus, abalone, scallops, and Ise shrimp – all caught through freediving by Hayama’s lone female fisherman, Akira Hatakeyama – as well as from famous fishing ports of Matsuura in the Miura Peninsula and Sajima in Yokosuka. The owner himself harvests the vegetables before they are shipped to markets. The restaurant uses Atsugi pork in Usui, where they handle everything from breeding to slaughter. The owner uses only Hayama beef, known for its simple flavor, and is very careful to use only local ingredients.
Dishes made from these carefully selected ingredients come in the form of traditional Japanese courses such as shabu-shabu, fugu (puffer fish), soft-shelled turtles. In particular, dishes like fried sesame-seasoned tofu and hot pot rice using seasonal vegetables allow you to experience the flavor of these quality ingredients.
Ornaments and trimmings displayed indoors were brought in from Otoharo, this restaurant’s predecessor, crafted by shrine carpenters . Table seats are placed by large windows, and there are 2 private rooms which can be seated up to 10 people each, allowing guests with children and elderly guests feel at ease. The restaurant caters to a wide range of settings, from celebrations, funerals, and entertainment, from formal to casual settings.
