The use the Ozaki beef from Miyazaki prefecture, purchased by chefs from within and outside Japan. The cows are fed with pesticide and preservative-free feed and natural spring water and fattened carefully over a minimum of a 30-month period, meaning that only roughly 1000 cows are shipped annually. This lean beef is characterized by a texture that melts in your mouth, and a sweetness of the fat that is not overly rich. The tuna is Yamayuki tuna, which boasts the highest volume traded and is said to be one of the freshest in Tsukiji. It is regularly ordered by top class sushi restaurants and chefs, and is the most sought after fish in Tsukiji.
Here at Ozaki Yukitaka, named so for its two representative foods, you can enjoy the dream collaboration in an omakase course. For example, the tuna can be prepared as a small bowl or as nigiri sushi using the "tossaki", a part of the tuna which is taken from the base of the head. The Ozaki beef can be served as minced lean meat or char-grilled sirloin, allowing guests to directly enjoy the flavor of the food. At the end of the meal, after a great time of tasting and comparing 2 types of rice, guests are served a luxurious truffle and egg rice bowl. The course allows you to experience the true nature of the foods until the very end.
