A progressive French restaurant by a Michelin 3-star chef who is influenced by Japanese food culture
The well-known restaurant Troisgros has been successfully managed by the Troisgros family for three generations in Roanne, France and despite its relocation, it has maintained a 3-star Michelin for the last 50 years. The only restaurant outside of France to be arranged by the third generation chef, Michel Trowasgros, is "Cuisine[s] Michel Troisgros", located in Shinjuku, Tokyo. It opened in 2006 on the 1st floor of the luxury hotel, the Hyatt Risgency Tokyo, and from 2007 has been awarding Michelin 2-star for 11 years. Since Michel Troisgros uses original ingredients produced from around the world to create a variety of dishes, the [s] in the restaurant’s name means that there is no specific category of cuisine.
Visiting Japan twice a year ,Michel Trowasgros gets inspired by the Japanese cuisine and develops his own dishes. Japanese ingredients like wasabi, citrus, and dashi (soup stock) were adopted into the menu. A feature of traditional French cuisine is that it incorporates inspiration from not only Japan but also various cuisine around the world, preserving the ingredients taste and creates a light finish.
The chef who is responsible for "Cuisine[s] Michel Troisgros" is Chef Guillaume Bracaval. He gained experience at a 3-star Michelin restaurant in Paris, and was trained at Troisgros in Roanne. Following in his teacher’s footsteps, he devotes his time in venturing across Japan in search of ingredients, use those special Japanese ingredients, and provide seasonal dishes.
The kitchen is visible through the glass from the entrance, where you will notice the interior is decorated with many natural materials like ancient timbers from Japan's ancient houses, which allows you to dine in a relaxing and elegant atmosphere.
