Four seasons bar is a Japanese restaurant specializing in sake, a 2-minute walk from Shimbashi station and on the 5th floor of the Elegance Shinbashi Building along the Karasumori Street. Do House, a marketing research firm that distributes the beer brand Heartland, opened the restaurant in April 2015 and was the company’s first venue into the food industry. It is a hidden gem where fans of Japanese sake can gather every night to enjoy sake and delicious sakana (seasonal snacks).
The head chef is Naoki Yamamoto. After working at a French restaurant in Kanagawa and being fond of Japanese sake, he became head chef at a Japanese restaurant in Shinbashi, called Magokoro Ishii, for 5 years. After that, he has been working in Four seasons bar as head chef since its opening. The signature dish is roast beef made with Japanese black wagyu beef. Customers can also enjoy side dishes made with seasonal ingredients, such as in spring, Wakatakeni is served using fresh seaweed from the Miura Peninsula; in summer, deep-friend corn in a light batter; in the fall, 3 slices of chargrilled saury, wrapped in a large leaf, or saury big leaf roles with saury soy sauce; and in winter, fried fish spring rolls, which is Shirako wrapped in a large leaf and cooked in kelp water. The Japanese sake is sourced from 8 to 10 liquor breweries nationwide, including Nara, Shizuoka and Kanagawa prefectures. In addition to the popular brands like Aramasa, Kazenomori, Senkin, Chochin and Shinomine, there are also around 40 kinds of sake, including rare Japanese sake like Daishinshu from Nagano, where Mr. Yamamoto visits every year. They will give suggestions to have the best marriage of Japanese sake with the seasonal dishes, for example, the signature dish, Roast Beef, matches with the Wakayama Kuroushi Dry Junmai Sake. Yamamoto says he “chose dry sake to counter the fat of the roast beef”. He goes on to say that "It has an excellent dry taste, with a gassy sensation, similar to that of pure rice wine, and a body that does not lose its flavor. There are also various kinds of sashimi, to combine with spicy hot sake.
There are 7 seats at the L-shaped counter and 14 table seats. This establishment is used for casual and business entertainment, and for oversea guests. Why not relax and enjoy a glass of sake in a cozy setting?
