A restaurant that combines Japanese food and yakitori with high-quality culinary skills and received Michelin one-star in its first year.
Torisho Ishii was opened in February 2016 in the Fukushima area, near Umeda Station and amongst the commercial buildings and high-rise condominiums. Although it is a hideaway restaurant down an alley off the main street, it still receives a large number of reservations, it is a Yakitori (grilled chicken) restaurant which received Michelin one-star in the very first year.
Mr. Yoshitomo Ishii, the owner of the restaurant, was trained at Michelin two-star restaurant Kimoto in Kobe, and Michelin one-star yakitori restaurant Ayamuya in Osaka. He used his many experiences to open a restaurant which, for the first time, offered a fusion of Japanese food and yakitori. The menu offers yakitori-only courses, along with courses which combine yakitori with other dishes. In the yakitori-only course, you can enjoy yakitori to the fullest. The other course begins with a starter and appetizer, then incorporates yakitori into the main dish. The appetizer is Japanese food which he learned while working at Kimoto, and also has elaborate dishes like egg sponge castella with minced meat, where customers can enjoy high-quality cuisine. The restaurant changes its menu every month, so customers will never get bored with the menu. The yakitori dish includes many pieces on a skewer, so there is enough to satisfy the customer. Customers can also enjoy a variety of original, delicious dishes, such as steamed chicken meatballs with truffle and truffle oil, which is made of crispy chicken skin, juicy chicken breast meat wrapped with skin. There are about 60 kinds of wine, mainly French, and about 15 types of Japanese sake.
Seating consists of 11 counter seats and a private room with a table of 4. From the counter seats, customers can see the flat grill which uses bincho charcoal, and there is no partitions such as heat-resistant glass, so customers can have a great view while the food is being prepared. By placing the air duct next to the cooking tray, the counter is able to be kept clean while the customers can sit close. There is no better feeling than enjoy yakitori while watching it being prepared so close with the chef.
