"Shigematsu" is a Japanese restaurant located on the 4th floor of a building along the Sotobori-Dori Avenue in Ginza 6-chome. With cuisine that uses seasonal ingredients, comfortable atmosphere, and good customer service, the aim of this restaurant is to create a place where guests can leave with good "memories".
The owner-chef is Shigeyuki Matsubara. After he graduated from high school, he trained in a sushi restaurant in Hachinohe, Aomori for 3 years before he moved to Tokyo. He acquired experience at the members-only traditional Japanese restaurant and a Michelin-starred Japanese restaurant, and then served as head chef at a "Kappo" cuisine restaurant in Shibuya. He went independent in October 2016 and opened "Shigematsu" with his wife.
The cuisine is characterized by layering different ingredients to provide better texture and fragrance. A thick bonito soup is used as stock, and each and every dish is served in a large portion with lots of impacts. The signature dish is cooked rice, and it is combined with seasonal ingredients to bring out the best balance of taste and texture. In the spring, for example, it might be combined with cherry shrimp, dried stem lettuce, cherry salmon, or bamboo shoot. Sake recommendations are selected by the proprietress, among which, the luxurious "Hire-zake" is especially popular, it is a sake that is made with more than 4 kg of natural blowfish fins.
The restaurant interior, designed by the owners themselves, has 6 counter-seat, and two private rooms that seat 4 or 8 people. The height of the counter has been adjusted so the eyesight of the guests parallel with the chef's eyesight. Moreover, lowering the ceiling creates a relaxed atmosphere. It is the restaurant suitable for entertaining, anniversaries, dates or a wide variety of purposes, and the warm reception from the owners is charming. This Japanese restaurant is highly recommended for guests who want to take a break in Ginza.
