Enjoy sushi prepared with care in a warm wooden interior

Around 7-minute on foot from Higashi-ginza station, “Ginza Ichibun” is located in the corner of a building in Ginza. This sushi restaurant is a reboot of the gourmand's favorite “Sushi Ogawa Ginza” in Ginza 7-Chome. The service of owner-chef Takeshi Ogawa is earning the establishment a solid reputation.

After graduating from university, Mr. Ogawa built up experience in Japanese restaurants and sushi restaurants before opening “Sushi Ogawa Ginza” in 2013. Four years later, in June 2017, he moved to Higashi-ginza to create a restaurant where guests could relax with a focus on full meals. Mr. Ogawa is constantly evolving his restaurant with the goal of making it a place he would enjoy going to himself.

The chef-selected side dishes and sushi served provide a glimpse of Mr. Ogawa’s careful work. Most of the side dishes are prepared with a little extra effort like in a small restaurant. Dishes such as “Boiled and smoked tuna” made with Otoro cooked in soy sauce and hay-smoked, and a combination platter of soft steamed abalone, abalone innards with dressing, and several varieties of sea urchin are also made to pair well with sake.

The sushi is mainly Edomae style. The vinegar rice is a heavenly blend of farm-fresh Akitakomachi rice, two varieties of red vinegar, and rice vinegar, resulting in a mildly tart taste. Rice cooking times are also coordinated so it’s fresh for each guest. The dishes themselves are also carefully selected, and include everything from Meiji and Showa era pieces like Imari ware, Karatsu ware, and Shigaraki ware to pieces by modern artists, making the sides and sushi stand out even more.

The interior of “Ginza Ichibun” features the liberal use of wood in its counters, ceilings, and floors to create a warm and relaxing space. With just nine widely spaced counter seats complete with arm rests, the setup provides plenty of room for each guest. This sushi restaurant is recommended if you want to take your time and relax for a casual business get-together, celebration, or date.
