"CRAFTALE" is the new must-visit restaurant in Nakameguro, Tokyo's heaven for foodies. The name "CRAFTALE" is the combination of "Craft" (technique) and "Tale "(story). The name suggests the notion of food that conjures up the love and passion of its producers as it is served to the customers.
The chef here is Shinya Otsuchihashi. He worked at "The Georgian Club" and "Joel Robuchon", and then spent time in France. The fresh and natural style of cooking and organic wine he came across when he worked at "Saturne" in Paris made a deep impression on him. These became the principles he wanted to apply in his own restaurant. Upon his return to Japan, Otsuchihashi worked in "Restaurant Anis", and in September 2015, he became the chef of "CRAFTALE". He has been receiving Michelin 1-star.
The key characteristic of Otsuchihashi's menu is that each dish has a story behind it. From 2018, he has increased the number of dishes on the menu compared to when the restaurant first opened. He now uses even better ingredients and has further refined the presentation of the dishes. Meat, fish, and vegetables - each ingredient reflects the sentiments and passion from the producers and plays its part in different dishes in the menu. The chef matches key ingredients and sauces to create a symphony of tastes and flavors. The menu also features "bread pairing", which is serving freshly prepared bread to match with the dishes in order to create a culinary partnership between bread and food. There is further enjoyment to be had by immersing yourself in the stories and descriptions of each dish as your food is served.
The large windows of the restaurant face out onto the Meguro River. There are six places at the counter and 18 table seats, set out in a natural-looking interior themed in white. Natural materials such as wood and stone add a sense of warmth to the cuisine. Relax and enjoy your meal in simple and elegant surroundings.
