In 2016, Restaurant L'aube reunited Hideaki Imahashi, who was the head chef at Keisuke Matsushima in Akabanebashi, Shoko Hirase, who was the chef-pastry chef, and Hiroshi Ishida, who was the chef-sommelier at Akabanebashi. In 2023, the restaurant will move to Kamiyacho and ARK Hills Sengokuyama Mori Tower for a new start.
The three are all giants of their field; chef Imahashi and patissier Hirase were trained in Paris and Nice, hot-spots in French cuisine, and sommelier Ishida is a former Japanese sommelier contest-champion and a decorated veteran of awards across the globe. This tri-ni-set comes together to produce a harmony of 'L'aube', or 'dawn', of 'birth'.
Both lunch and dinner offers courses of 5-7 layers. Chef Imahashi, drawing on his past as a farming chef, concocts a course centered on Kamakura vegetables grown on sea-side, nutrient-rich soil. Coupled with fresh-caught fish from Kyushu's Amakusa, and the finest selected meats from both Japan and abroad, 'L'aube' serves a classical yet visionary French cuisine.
Patissier Hirase too showcases her craft; from live slicing of oven-fresh loaves of bread at your table-side, to delicate sweets served in exquisite jewelry boxes, 'Laube' brings an exciting approach to presentation sure to make your hear dance.
Wines selected from new and old world alike, from France but also South Africa, the Americas, Georgia, and others, line 'L'aube''s impressive cellar. From this selection sommelier Ishida proposes wine-pairing options tailored to each guest.
The dining hall, with 32 seats, is illuminated through walls lined with lighting reminiscent of champagne bubbles. The ornate, Möbius strip-themed centerpiece at each table is similarly striking. The hall offers not just a luminescent mood; from the dining guests can gaze into the kitchen, and watch the masters of foods and pastries spin their craft.
