A calm, casual setting to enjoy 1-star sushi and other cuisine made with local ingredients from Kyushu

Hakata is incredibly well-known when it comes to the city of Fukuoka, and among that same region of the city is an area called Daimyo, which is home to long and narrow alleyways with large clusters of unique clothing shops and restaurants. It is here in a back alley that you can spot a wood lattice door with a white Noren curtain sign hanging overhead for “Sushi Kuma.” This well-received sushi restaurant has won the favor of a mature clientele who enjoy its relaxed dining atmosphere, and in 2014 and 2019 the restaurant was rewarded for its efforts with 1-star.

"Sushi Kuma" is run by the Chef, Takashi Kumagai who put his time in building up his repertoire at sushi restaurants and traditional Japanese-style establishments, including 4 years of training at “Tenjaku” in Hakata’s Nakasu-Kawabata area, before moving on in 2009 to open up a place of his own. The menu at "Sushi Kuma" is heavily focused on local Kyushu ingredients that emphasize each season. So with that, guests can enjoy seasonal courses that are tailor-made to highlight local flavors throughout the year. Chef Kumagai goes to the market himself every morning to pick out ingredients firsthand, and everything he purchases comes directly from Kyushu, which includes seafood of course, as well as vegetables and rice. One course features Edomae style nigiri sushi that includes vinegared Kohada (gizzard shad), pickled tuna, and flounder with kombu (kelp), which sometimes have a dash of citrus for added fragrance. Their spectacular seasonal seafood is complimented with a refreshing assortment of smaller dishes, such as seasonal Ohitashi salad, pickled foods, and specialty chawanmushi, which is an egg custard recipe unique to Japan. The food at "Sushi Kuma" is perfectly paired with Japanese sake, and just like their food, their large selection of sake almost exclusively focuses on local Kyushu brands. Prices start at 300 yen for 90ml, so guests can comfortably enjoy drinks with an accompaniment of side dishes for a reasonable price.

The interior features a white color tone and bright ambiance. Chef Kumagai also has a warm, friendly personality that goes a long way to help guests feel at ease when they walk in for the first time. The restaurant offers 8-seat total at the counter, as well as one private room that can serve up to 6 people. This way guests can enjoy whatever type of dining experience they are looking for, whether it be a date, celebration, reception, or another occasion. Chef Kumagai says that “I want guests to be able to stop by and enjoy a memorable meal here during their trip to Fukuoka.” Guests are sure to enjoy an unforgettable meal that will always remind them of their nights in Fukuoka.
