Nishi-Azabu Sushi Restaurant That Impresses Customers With its Warm Heart of Hospitality

In the midst of Nishi-Azabu, an area full of talented restaurants stands the stylish concrete outer wall of the warmly lit ""Sushi Fujimori"". Awaiting customers with a bright smile as they pass under the store’s curtain and into the restaurant is the owner with 15 years of experience training in the metropolitan area, Yasuhiro Fujimori, and Noriko, the proprietress with experience at the world gourmet guide award Japanese restaurant ""Kanda"". The restaurant opened in 2007.

The refreshing interior consists of only 8 counter seats where a chef’s choice course of nigiri sushi and side dishes are offered up to guests one or 2 at the time in alternating fashion. Chef Fujimori’s style is to start guests off with a single maguro nigiri crafted on the small side with perfectly vinegared sushi rice. Noriko is in charge of the side dishes offered up in between the fast-paced sushi courses, and these perfectly crafted selections give customers a sense of the season. The chefs take the order that dishes are eaten into account as well, such as starting off the course with a pureed soup to calm the stomach before offering up a hot dish to warm the body, allowing guests to have a pleasant experience until the very end. The restaurant has a varied alcoholic beverage selection as well, including a selection of Japanese sake hand-picked by Chef Fujimori, such as the standard ""Noguchi"" from Ishikawa and the rare ""Nechi Otokoyama"" from Niigata made with pesticide-free rice, as well as champagne, wine, and other drinks that go well with seafood.

Chef Fujimori and Noriko, while of course particular about their cuisine, strive to be particular about the hospitable service they provide to customers as well. Chef Fujimori himself remains ever watchful and attentive to his customers even while thoroughly and carefully carrying out his work. His working space is made so that it can be seen from the customers’ seats so that they might “enjoy an up-close and personal experience.” “I try to explain the dishes to foreign customers having sushi for the first time as well so that they can better enjoy themselves,” says Fujimori. This genial personality is the basis for the overwhelming trust he has fostered in his regular patrons who boast that one can bring absolutely anyone to this restaurant and have them leave satisfied.
