Helmed by Chef Hiroyasu Kawate, Florilège is a widely acclaimed restaurant that has received two stars from an international restaurant guide. Chef Kawate accumulated experience by working at Le Bourguignon, a one-star restaurant in Roppongi, and by serving as a sous chef at Quintessence, a three-star restaurant in Gotenyama. His experience has made him a globally influential player in the restaurant industry. In Autumn 2023, he made a fresh start in Azabudai Hills, opening his third restaurant after closing his restaurant in Gaienmae.
Having worked on sustainability for years, Chef Kawate has embraced the concept of plant-based eating at his new restaurant, which features vegetables (plants) indigenous to Japan, instead of using meat or fish as the centerpiece of meals. For the entree, guests are also offered two options, either meat or vegetables.
Moreover, the drink menu offers a diverse range of pairing options, including not only wines but also other alcoholic beverages and mocktails.
The restaurant’s interior is designed in table d’hôte style based on Chef Kawate’s long-planned concept for the restaurant. The large table that everyone can gather around as if they were invited to a family dinner serves various occasions and makes the experience even more enjoyable.
