Kikuzushi is located in a quiet residential area in Kasuga City, Fukuoka prefecture. Founded in 1980, it is now run by second generation owner Yusuke Seguchi, attracting attention from Japanese and foreign guests. Seguchi trained for 10 years in Hakata's well-established sushi restaurant, Kougyoku. After that, he was invited to Monaco's five-star hotel Métropole, Monte-Carlo, where he was active as a teacher of sushi. At the wedding of Monaco's Prince Albert and Princess Charlene, he entertained guests with sushi in the royal palace with the likes of Joel Robuchon and Alain Ducasse. After returning to Japan, he took over as the second-generation owner of Kiku Sushi in 2012, becoming famous for its evolved taste of sushi and small dish.

The seafood is flown in from all over the country, but mainly from Kyushu. The rice is of a special quality; in order to match well with the sushi at Kikuzushi, rice which has been dried before being milled has the moisture within regulation by the specialty farmhouse in Saga prefecture before it is purchased directly. To make the vinegared rice for the sushi, the rice is cooked somewhat hard in an earthenware pot, and then red vinegar is added. The high-quality sushi made from sushi rice with a subtle firmness and flavor and carefully prepared seafood has enthralled many sushi fans.

Based on the sukiya tea ceremony arbor style of architecture, the restaurant's interior is a space of traditional Japanese culture. The 10-seater counter is made from wood of a 100-year-old ginkgo tree, and adds to the dignified atmosphere. The restaurant is available for business entertainment, dates, and anniversaries. We would like for you to experience owner Seguchi's sushi, which follows the motto of "the most delicious sushi on that day".
