“Ryoriya Tachibana” is located 3-5 minutes on foot from Roppongi station, a back alley on Gaien Higashi Dori, after entering an even more secluded place you will find a storefront that is the home of the Japanese restaurant. Based on the concept of “Taste of Japan,” with the idea of “Growing Japanese Culture Through Flavor,” we will accomplish this not only through Japanese culinary culture, but also by creating the restaurant that can spread the ceramics and glass-work of contemporary Japanese artists to the world.

The owner-chef is Mr. Kosei Tachibana. After learning the art of sushi and Japanese cooking in his hometown Fukuoka, he traveled to Tokyo. He was trained at several Japanese restaurants in Asakusa, Nihonbashi, and Shinjuku, and also has experience as a head chef. After that, he worked for 13 years at “Kozue” in the Park Hyatt Tokyo, where he was the sous-chef. In November of 2017, he went independent and opened “Ryoriya Tachibana.”

With great interest in tea ceremony, Tachibana brings his obsession of “ocha” to all aspects of the course. When guests are seated, they will first be offered an “issen” (the first course in Japanese tea ceremony) of Fukuoka Yame Dento Hongyokuro (known as the “king of green teas”). In a teapot set into the center of the counter, it is brewed with “Ougaku” water from the Tarumizu Kagoshima natural hot springs, for a tea characterized by a deep umami and aroma. In addition, dishes that make use of this tea are also offered, and at the end of the course, Mr. Tachibana’s matcha will be served.

The atmosphere of the live performance at the counter is another attraction, and the soup stock used is prepared in front of the guests with shavings from bluefin tuna and two types of bonito so that they can enjoy the unparalleled flavor of the stock when it is freshly prepared. Also, sashimi is offered in an impactful large bowl. Upon a bed of ice,Upon a bed of ice,Seasonal seafood carefully selected from all over Japan are served.

The dinnerwares used are mainly works from contemporary artists such as Mr. Sakurei Okamoto. The clean and fresh atmosphere inside the restaurant, with its traditional finished plaster walls, features a chic black cork counter with 8 seats, and a private room for 4 guests. It can be used in a wide variety of settings, including anniversaries, dates, or business dinners. It is a remarkable restaurant, where one can taste Japanese culture in a relaxing space.

    We had a great time! The food was delicious and immaculately presented. Every component of the dishes was thoughtful and added to the its taste and texture and our overall enjoyment. The staff were a bit nervous at first, knowing that we speak only English, but they tried hard to make us feel welcome and to explain as best they could. Luckily we can read Chinese, so we were able to decipher a bit of the menu from the kanji. We left very very happy and with satisfied bellies ¨̮
