A 1-star restaurant serving French cuisine with a Gault & Millau appeal, prepared daily for guests

Surrounded by the bountiful sea and numerous islands, the unassuming French restaurant ""Amiral"" lies hidden within Kure City, Hiroshima Prefecture. The concept is to ""prepare cuisine exclusively for the guests of the day,” welcoming in just 1 group of guests for lunch and dinner each day. The owner-chef Shigeaki Nagashima prepares cuisine and serves his guests, making for a unique experience that has put ""Amiral"" on the map.

Chef Nagashima completed his culinary training at a restaurant in Hiroshima City, after which he worked as the resident head chef for ambassadors at the Japanese embassy in Morocco. Demonstrating his French cooking to the many foreign guests who visited, he was awarded the status of “exemplary resident head chef for ambassadors” by the minister of foreign affairs. Then, after returning to Japan in March of 2013, he opened ""Amiral"". He is the only chef in the Seto inland received the "Promising Young Chef Award" from the World Gourmet Guide and has been awarded one star by the famous gourmet guide.

A distinct feature of the cuisine is its use of simple dishes that focus on one ingredient. It may appear simple, but once it’s in your mouth a multitude of flavors explode. The wine selection centers on France, but there is a wide variety including wines from countries like Argentina and Romania, and suggestions are made based on the preferences of guests. The only Japanese sake they have is the local ""Hanahato""; they also have a good selection of digestifs such as cognac, Calvados, pomace brandy, and whiskey.

As you open the wood patterned sliding door with a Japanese feel to it, you would enter a space that feels chic and classy; there is a counter at the kitchen that seats 6 and a table that also seats 6. Guests might sit at either the counter or table and because you’ll have the place to yourself you do not need to worry about other customers; it is perfect for special occasions or a date. They also accommodate halal and vegetarian needs. When you make a reservation at ""Amiral"", you are guaranteed a truly special experience for that day.
