“Le Jardin des Sens” (Montpellier in southern France) gained attention from the foodies all over the world for receiving a world gourmet guide award rating at the youngest age in 1998. This restaurant belonged to twin chefs, Jacques Pourcel and Laurent Pourcel. “Sens et Saveurs” in Marunouchi, Tokyo was their 1st oversees restaurant.
Their cooking style, referred to as the “Pourcel cuisine,” is based on the idea of what would be considered “traditional, 100 years from now,” and redesigns French cuisine according to their unique sense. Their food is characteristically light, being influenced by the warm climate of the Languedoc region and the Mediterranean Sea. They often incorporate fruits in their dishes to create a delicate and light taste through the acidity, sweetness, and fragrance of fruits.
“Sucré Salé” is a common technique used by the chefs. By combining a contradictory flavor, like salt, to the tartness or sweetness of fruit, the inherent flavors of the ingredients are multiplied in the mouth. Moreover, they are known for dishes featuring freshness of the ingredients such as “Terre et Mer,” which combines items from the land and sea in one dish.
The executive chef, Takeshi Kamoda, is in charge of the kitchen. Following the advice from Mr. Pourcel to “create a southern French cuisine with a uniquely Japanese style,” he incorporates Japanese ingredients to create his unique style of southern French food. His specialty dish is “red sea bream with lemon vinegar sauce,” where a perfectly cooked mature red sea bream is served with a sauce featuring seasonal citrus fruits.
Sun-soaked fruity wines from southern France pair well with these light dishes. “Sens et Saveurs” offers 200 kinds of wines directly imported by the Hiramatsu group. Moreover, the amazing location of the restaurant, the 35th floor of a building in Marunouchi, adds to the extraordinary food experience at this restaurant. You have the view of the greater Tokyo area through the large windows, and the Imperial Palace is visible from the bar area. “Sens et Saveurs” has the capacity to seat 80 guests, and private rooms are also available. “Sens et Saveurs” is perfect for a variety of occasions including celebrating anniversaries, dates, and business use.
