Pioneering a new restaurants age with tea pairing

Doing what you love to earn a livelihood. The owner-chef Shusaku Toba has pride in his calling and brings innovation to the Japanese restaurant industry as a spirited, energetic chef. After working at Italian restaurant ""DIRITTO"" in Kagurazaka and world gourmet guide award innovative restaurant ""Florilege"" in Azabudai, he took positions as sous chef at ""Tacubo"" in Daikanyama and chef at ""Gris"" in Yoyogiuehara before finally opening ""sio"" in the same place in 2018. The restaurant's name comes both from Japanese ""sio"" (salt) used in cooking as well as the acronym for ""Shuusaku Itsumo Oishii (Shusaku is always delicious),"" a most charming meaning. From this small, 16-seat restaurant arises a culinary reformation of a new age.

After his years rich with experience, Mr. Toba has arrived at the idea of a ""support-format committed restaurant."" By bringing together all the people who are involved in a restaurant—food producers, cutlery makers, interior designers, music creators—he aims to improve everyone's business and create a large movement. Mr. Toba has only one thought for ""sio"": to make unquestionably delicious food with his own hands and bring joy to his customers and other cooks. That's all. The chef's choice course is similar to ""Gris"" but more evolved, and while it is subtle and artistic, it focuses strongly on flavor and cheerfully transcends the boundaries of French cuisine with no regard for limits or genres.

Accompanying Mr. Toba's subtle cuisine are 6-7 types of tea pairings which do not hinder the food. Not concerned with providing the best match, the aim is simply to allow one to enjoy the variations of tea by providing tea pairings only to be found at ""sio,"" such as Taiwanese ""Tohobijin,"" blue tea, or carbonated jasmine tea. Wine is also offered, with 16 types including much natural French wine are available, and pairings are made just as with the teas. With his eloquence and diversity lending to his power as a chef, Mr. Toba's ""sio"" will pull forward the restaurant industry and become a flagship restaurant for reform.

    Very good dishes and atmosphere. The night of my reservation did not have English-speaking staff, but was able to converse in my limited Japanese and some English. Service was really great and I'm still thinking about the dish of clam, kale, and green salsa.
