world gourmet guide award French cuisine giving rich expression of the earth

Chef Hironori Sato moved to France as soon as he graduated from high school, cultivated his culinary skills while traveling back and forth between France and Hokkaido, and opened ""meli melo"" in the Maruyama district of Sapporo in 2013. He moved to his current location in 2015. In August of the same year, he went to France and experienced 6 months of training at world gourmet guide award French restaurants, Astrance, Ledoyen.

Literally translated from French, ""meli melo"" means a ""mishmash of fun"". Mr. Sato talks about wanting to express on his plates a scene like a butterfly fluttering around a garden full of blooming flowers. With carefully selected ingredients from Japan and abroad, French techniques, and his Japanese sensibilities in each dish, he expresses a variety of textures, aromas, and flavors. The moment you put it in your mouth, the ingredients instantly blend together, the story and background of the ingredients become like a scene before your eyes. This richly creative cuisine has been highly regarded, earning world gourmet guide award in 2017.

In preparing his food, Chef Sato values 3 elements: the ingredients, the aromas, and the land. Ingredients are sourced not only from Hokkaido but from all over the country, and by incorporating at least one ingredient from Hokkaido in all dishes, he creates food which can be tasted here and nowhere else. His signature dish is a scallop appetizer served with a seasonal vegetable sauce. It combines lime and herbs with a sauce of bitter and fragrant chrysanthemums to bring out a variety of fragrances, giving expression to the seasonal senses of a vast landscape. The worldview of ""meli melo"" can also be enjoyed by pairing with wine, mainly Burgundy, or non-alcoholic drinks.

The concept of Chef Sato is that he wants his customers to enjoy not only the food but also space and the service. The large glass windows give the interior of the restaurant a sense of openness. The proximity of the chef in the open kitchen creates a sense of unity and presence, adding further spice to the delicious food. The chef, service, and customers feel as one, creating a happy time.
