A 2-star classic Japanese restaurant featuring Fukuoka's unique characteristics and culture

"Oryori Furukawa" is located not far from Hakata- Tenjin area in Fukuoka, perhaps the most lively downtown areas on the whole island of Kyushu. The owner-chef, Makoto Furukawa is originally from Fukuoka and has accumulated considerable culinary experience from 13 years working at the famous Japanese cuisine restaurant "Aji Kitcho" in Osaka. He refined his skills for a further four years at a restaurant back in Fukuoka, before opening his own in 2018.

Talking about his culinary craft, Chef Furukawa explains, "I keep the classic Kaiseki cuisine that I was taught at the core of what I do, but I like to explore ways of presenting dishes that are possible thanks to being located in Fukuoka." Chef Furukawa is not only prodigious in his use of the finest local ingredients, such as seasonal produce sourced from Yanagibashi Market, but also in his use of local crafts at the restaurant, such as Arita-ware porcelain, woven Hakata-ori fabrics, decorative Okawa fretwork, Kurume lacquered baskets, and Hakata circular boxes. He aims to develop a restaurant that promotes the culture of traditional crafts, not just in Fukuoka but all of Kyushu, and the thoughts of the craftspeople through food. One of the culinary delights, that appears in the progression of dishes served as part of a multi-course meal, is the "Hassun," an assortment bite-sized delicacies arranged on a plate. Ever since his day's training at "Aji Kitcho," Chef Furukawa has enjoyed assembling these visually pleasing dishes, as much a feast for the eyes as for the palate. Dashi stock is very important in Japanese cuisine, and at "Oryori Furukawa" it is no exception; Chef Furukawa prepares his stock using top grade kelp from Shirakuchihama, Hokkaido, that he procures from a specialist kelp store in Osaka, and bonito flakes from Makurazaki. The final dish of rice served in an earthenware pot at the end of a meal is prepared using rice that Furukawa grows at home in Dazaifu, and he cooks it fresh for each and every customer. This level of attention to detail and the quality of the carefully selected ingredients really shine through in the food. Chef Furukawa usually has over 18 varieties of seasonal Japanese sake on offer, all of which perfectly match his cooking, and are instilled with the thoughts of the brewers.

"Oryori Furukawa" has a pure, Japanese-style interior, evoked by the beautiful counter made from single piece of cherry wood, made by Moriyama-Meiboku in Fukuoka. Chef Furukawa wanted to create an atmosphere that was not too formal, in which he could enjoy being together with his customers, and so he achieved a design with a real sense of presence, where the charcoal grill is visible across the counter. There are 6 seats at the counter and a further 2 private rooms, and children are welcome. Chef Furukawa always does his best to satisfy customer requests, whatever the occasion. Therefore customers can relax and enjoy the attentive entertaining characteristic of a Japanese dining experience while being wowed by the exceptional food and absorbing the local culture.
