Enjoy Matsusaka beef with kaiseki style filled with creativity

“Matsuzaka Ushi (Beef) Kaiseki Shin”, located close to the landmark "Toranomon Hills" in Toranomon, Tokyo, an area currently undergoing redevelopment, reopened on November 16th. The new head chef, Ryushi Yamamoto, has worked at many restaurants in Japan, Europe, America and China. He previously served as head chef at a members-only restaurant, and at a restaurant in Tokyo that is an offshoot of a 3-star restaurant from New York.

They serve "Matsuzaka beef", a top-class brand of Japanese beef, with the theme of "Onkochishin" (old wisdom), expressed in an innovative way, incorporating the essence of traditional Japanese cuisine with French techniques. Chateaubriand and sirloin of Matsuzaka beef are slowly heated at the just the right temperature and grilled over charcoal. Fresh Matsuzaka beef giblets, which are rare in Tokyo, are made into creative Japanese dishes using pure water from the Nobi Plain and pesticide-free vegetables, grown on fertile land. It is innovative, fusion-Japanese cuisine made with the sweetness of Matsuzaka beef, wholesome vegetables, and the seasonal seafood of Edo.

What amplifies the deliciousness of this "beef kaiseki" is the carefully selected sake. They serve French, Italian and American wine by the glass to match the dishes. They also have vintage Japanese whiskeys like "Yamazaki" and "Hakushu", which are difficult to get. Another attraction is the restaurant’s selection of rare sakes which you can enjoy by the glass, such as "Jikon" and "Zaku", ordered from Mie Prefecture, the hometown of Matsuzaka beef. They also have non-alcoholic drinks made by the chef for those who prefer not to drink alcohol.

The interior of the restaurant has an inspiring atmosphere, based on art nouveau. There are 12 counter seats and 3 private rooms that can accommodate 3~12 people. The restaurants aims to meet food preference requests and has services in English and Chinese, to accommodate guests from overseas and for business situations, allowing you to entertain guests with peace of mind. In an international area such as Toranomon, you will definitely want to enjoy the unique Japanese food experience of "Matsuzaka beef x Japanese sake".
