A new stage of an experienced sushi chef. An Edo-style sushi restaurant tucked away in the residential neighborhood of Shirokane

Located a 10-minute walk from Shirokanedai Station. Sushi Mizuno stands unobtrusively in a quiet residential neighborhood. Yoshiyuki Mizuno, the owner-chef, spent 20 years training at a long-established sushi restaurant in Nihonbashi before opening Sushi Shibadaimon Mizuno in Daimon, Tokyo. Seeking a new stage, he relocated it to a back street in Shirokane in 2018.
“I want people to savor Edo-style sushi done right while they enjoy the location with its 'A sushi restaurant here?' sense of novelty,” says Chef Mizuno. The seafood is sourced from Toyosu Market. He uses the same suppliers as the restaurant where he learned his craft. Their long-term relationship and trust enables him to source fine seafood. He uses only red vinegar and salt to enable a traditional flavor for the sushi rice. The rice is a flavorful variety from Yamagata called Tsuyahime, which is aged in an ice house. He then combines two varieties of red vinegar, aged for 8 years, to create sushi rice with a clean flavor, pleasing to the palate. The prepared sushi rice is place in a specially made straw carrier to help controlling the temperature. “Nigiri-zushi is the leading part in Edo-style sushi. I place a lot of importance on customers’ enjoyment of the sushi,” says Chef Mizuno, and as he adds on, guests can enjoy his perfectly prepared nigiri-zushi here. In addition, the sake is personally chosen by Mizuno himself. There is a selection of 7 to 8 varieties of sake that are chosen to match with the sushi and other Japanese side dishes.
The interior features beautiful Japanese carpentry such as a Japanese cypress counter and wickerwork ceiling, with only 7 counter-seat, which can also be reserved for private party. The copper framed lantern placed at the entrance was created by a Kyoto artisan, and Chef Mizuno’s ideas are reflected on everything, from the interior furnishings to the kitchen utensils. “This restaurant is by no means exclusive, please feel free to make casual reservations,” says Chef Mizuno. Guests can enjoy classic Edo-style sushi in an unpretentious atmosphere for a reasonable price at this secluded restaurant.

    白金の隠れ家お寿司屋さんにピッタリな場所です。 だからこそ敷居が高いイメージでしたが、大将がお話好きで、和やかな雰囲気を演出してくれたので、楽しく頂けました。 甘めのあん肝はクセになりますね。 また時間使って伺いたいなと思いました。
