French cuisine, expressing the purity of natural ingredients from Japan

Close to Omotesando, one of Tokyo’s leading trend-setting areas, the Gaienmae area has a calm atmosphere. “Prévenance” is located in a quiet back alley, just a short walk from the station. The owner-chef, Hiroki Shizukai, began learning his culinary art at the age of 19 and was trained at French restaurant, “Sens & Saveurs” in Tokyo, and “Keisuke Matsushima” in Nice, France. He was awarded one star in “Restaurant-I” in Tokyo, where he was the Head Chef for 3 years. As a highly sought after chef, he went independent in November 2013.

The meaning of the restaurant’s name, “Prévenance”, is “attentiveness to act” in French. In addition to its mission of creating and portraying the future of cooking, the restaurant strives to provide service that is a step ahead of what the guest looks for. The base of owner-chef Shizukai’s cuisine, which is full of robust flavor and vitality, is using a variety of ingredients that have been nurtured by nature, as they were meant to be. The ingredients originate from homegrown farms in Ibaraki and from reliable producers all over the country, such as wild mushrooms and edible wild plants that are selected by the chef. “I was deeply impressed by the fact that delicious food can grow on mountain sides without help from anyone. I want to express the splendor of Japanese ingredients on the plate by going to mountains or rivers and understanding natural ingredients,” says owner-chef Shizukai. The restaurant also serves charcoal grilled meat as a main dish.

The wine that matches well with the cuisine ranges from French to Japanese, as well as natural wine. Wine pairing is also available to meet your needs. The combination of the food and wine allows guests to enjoy the flavor of the various combinations on the plate.

The white interior is an elegant space and service is available in English and French. “Prévenance”, a restaurant to visit with your date, with friends, or for business gatherings and special occasions.
