“Sushi Shin by Miyakawa” is an Edomae and Ezomae sushi restaurant, located on the 38th floor of the “Mandarin Oriental Tokyo” in Nihonbashi.

This sushi restaurant incorporates the styles of both Edomae and Ezomae, under the supervision of Masaaki Miyakawa, of the three-star “Sushi Miyakawa” restaurant in Hokkaido. You can see the Tokyo Skytree from the large window and enjoy Edomae sushi whilst taking in this superb view.

Tetsuya Uno is in charge of “Sushi Shin by Miyakawa”. He is a veteran sushi chef with more than 20 years of experience. The seafood used at the restaurant is purchased from markets in Hokkaido and Toyosu in Tokyo. The combination of Edomae-style methods, such as maturing the fish to bring out the flavor, and the Ezomae-style of Hokkaido that uses fresh seafood, make the courses very well-balanced. The vinegared rice is a blend of red vinegar and "Tsukiakari", a new breed of rice from Niigata. For dinner, the Omakase Course consists of 5 appetizers and 10 pieces of nigiri sushi. About 30 kinds of sake, mainly from Hokkaido, Tokyo and Tohoku region, are available, as well as 30 ~ 40 varieties of wine and champagne.

The interior has been decorated with splendid Japanese craftsmanship, including an eye-catching 350 year old cypress counter. The kumikozaiku near the entrance is made by Nobuo Tanihata, a renowned master who specializes in this woodworking technique that is over 1,300 years old. The wall behind the counter is designed by Shuhei Hasado, a master of "tsuichi-kabe" clay craftsmanship .
