Dogoyuno-cho in Matsuyama City is the gateway to Ehime in Shikoku. “Dogo Kaishu” is a one-star Japanese restaurant located in Dogo town, which is said to be the oldest hot spring resort in Japan. In a tasteful house, chef Kisei Sakamoto showcases his skills with the intent that, "I want people to know how wonderful the local ingredients of Ehime are".

“Dogo Kaishu” was established in 1982. Chef Sakamoto was born as the 2nd generation head of the Sakamoto clan and, after training in the Kansai and Kanto regions, desired to "make Ehime a more proud town". He succeeded his predecessor at Dogo Kaishu and ensured that the good reputation of the restaurant would continue. In 2020, Dogo Kaishu moved from Ichiban-cho, Matsuyama City to "Dogo", the gateway to Ehime, which is visited by many tourists. In order to have the capacity to entertain guests from inside and outside of the prefecture, it took more than a year to complete the construction of the new Japanese-style restaurant.

Chef Sakamoto says that "I believe that simple and appealing dishes are ideal. They still take time and effort to prepare, but I want my cuisine to express the various tastes and flavors of Ehime in a simple way, without making them too complicated." Ingredients are mainly sourced from Ehime Prefecture where they are purchased directly from local farmers and fishermen, fresh fish stores and fruit and vegetable shops. In the spring, Sakamoto-san uses natural sea bream and wild vegetables and in the summer, he uses Ayu (sweetfish) which are actually caught by his predecessor at Dogo Kaishu. In the autumn he uses river crab, bonito fish and matsutake mushrooms, and in the winter, wild boar, wild game meat and pufferfish. You can enjoy the natural bounty of Ehime in all four seasons.

The restaurant offers a variety of high-quality sake from all over Japan, including Ehime's famous sake. They also serve craft beer that goes well with fish from Setouchi and the restaurant’s cuisine. The beer is specially made at the nearby brewery 'DD4D', and you can even find an original craft beer that is only available at Dogo Kaishu. They have natural wines from around the world, including chef Sakamoto's favorite California winery, "KENZO ESTATE".

The concepts that Sakamoto-san wanted to promote in his restaurant are those of longevity and homeliness. The restaurant was designed by a Japanese architect who specializes in making Japanese-style homes. The objective behind designing it in the style of a house was that with every visit a guest makes, they will feel more comfortable and at home. The L-shaped counter (9 to 10 seats) is covered with tatami made of pesticide-free Kumamoto rush, giving you a sense of warmth, helping you to relax while eating. In addition, there are 2 sunken kotatsu style private rooms (2 to 8 people) and a private room with regular tables (up to 24 people) on the 2nd floor. You can enjoy Ehime's charming “Dogo Kaishu” for various occasions, such as gatherings with family, friends and colleagues, dates and entertaining overseas guests.
