25 years in “Kyubei”, sushi made with three types of vinegared rice and skilled technique

Ginza, Tokyo is an area with many famous sushi restaurants. On the 9th floor of a building in Ginza 7-Chome is where “Sushi Kiyoshi” is located. Chef Sakai Kiyoshi studied for about 25 years at the famous sushi restaurant “Kyubei” and learned traditional Edomae-style sushi. In August 2019, he opened “Sushi Kiyoshi”.

Chef Kiyoshi not only go to the Toyosu market every day to carefully select the fish in season, but also make use of the connections he has with people and his ability from his long experience, to use fish carefully selected by fishermen in Goto City, Nagasaki Prefecture, and the natural fish in season from all over Japan. In addition, the fish is rest for several days to bring out the original flavor of the ingredients. The use of 3 types of vinegared rice is unique to “Sushi Kiyoshi”. The three types of vinegar, white, red and rose, are mixed with rice from different regions, and they are changed according to the ingredients used in the sushi. "Nikomaru" from Goto City in Nagasaki Prefecture that is carefully selected by the chef, "Yukihoka" from Kawabamura in Gunma Prefecture that is chosen because the sweetness of the rice goes well with the sushi and "Koshihikari" from Kyotango City in Kyoto that goes well with red vinegar are used. Using only vinegar and salt, the vinegared rice allows you to feel the full flavor and character of the rice. The sake that goes well with sushi and side dishes is recommended by the owner, who also has a license as a sake brewer. There are about 5 to 6 types of wine from California, France, New Zealand and etc.

The stone-paved approach that continues from the elevator brings guests to a relaxing space with attention paid to the layout and the dinnerware. This is where the special food experience at “Sushi Kiyoshi” begins. There is a L-shaped counter that seats 9 and a private room (2 ~ 4 people). You can relax and enjoy Edomae-style sushi made with skilled techniques in many occasions, such with date, colleagues, friends, and oversea guests.
