Leaping into the future, a modern French cuisine made by a talented chef from a 2-star restaurant

“l’élan” is located on the 4th floor of “GYRE”, a fashion complex building near Meiji-Jingumae Station in Tokyo. Chef Ryoma Shida, from a two-star restaurant, serves modern French cuisine here.

Chef Shida, who was interested in cooking from an early age, graduated at the top of his class from the Ecole Hôtelière Tsuji in order to enter the world of cooking, and trained at the 3-star restaurant “Troisgros” in Roanne. After returning to Japan, he entered the 3-star restaurant “L’osier” in Ginza. Once again, he went to France and improved his skills at a restaurant in “Hôtel de Crillon” in Pairs. In 2012, he came back to Japan and participated in planning the 2-star restaurant “ESqUISSE” in Ginza. He studied under chef Lionel Beccat and became the sous-chef after his skills were recognized. In 2015, he represented Japan in the U-35 in Milan. In January 2020, this restaurant was opened and he is the chef.

Domestic ingredients are mostly purchased directly from a limited number of reliable producers. Vegetables are purchased from Noto, duck from Kyoto, seafood from Miyazaki and Awaji, and daily visits to markets, thus the cuisine of “l’élan” represents Japan's four seasons. There is a wide range of famous wine and wine from New World, with around 300 types of Burgundy.

The interior was designed by Tsuyoshi Tane, an architect based in France. It has a calm atmosphere as if you were in a forest, based around the color of thick tea and green. Glass works by artist Mika Aoki are placed on the table, and many dinnerware by artists are also used. There is a dining room with 22 seats and private room with 6 seats. “l’élan”, where you can enjoy food and wine in a modern space, is recommended for dining and dating with family, friends and colleagues. You can also have a peaceful time while enjoying the night view, with oversea guests or for a girl’s night out.
