Kabuki-za Theater is in Higashi-Ginza, in the glamorous Ginza, home to a row of calm, secluded shops. Kobikicho Tomoki is a sushi restaurant behind the Kabuki-za Theater, a two-minute walk from Tokyo Metro Higashi-Ginza Station.

Chef Tomoki Kobayashi studied under Keizen Sasaki of the famous restaurant Sushi Sakaki. In 2007, chef Kobayashi opened Kobikicho Tomoki in Higashi Ginza, Chuo Ward; it has held two stars since 2019.

The ingredients are purchased mainly from Toyosu market, and are also thoroughly localized. Chef Kobayashi himself visits the area, talks with fishermen and people in charge of auctions, and inspects the environment in which the ingredients are grown and distributed. All of this shows chef Kobayashi's passion to purchase the best ingredients and deliver them to every guest.

This attitude makes Kobikicho Tomoki a first-class restaurant. The vinegared rice is made with the white vinegar used by his master chef Sasaki in Sushi Sakaki, and is finished with a strong flavor typical of Edomae-style sushi. All of seven sakes are carefully selected by chef Kobayashi after his visits to the breweries. As for non-alcoholic drinks, fresh acerola juice from Okinawa is recommended.

The interior of the restaurant highlights wood grain and has a L-shaped counter with 9 seats. The calm interior shows off the beauty of the plain wood counter. The 200-year-old Kiso hinoki cypress has a majestic appearance and produces a warm impression in winter and a cool impression in summer. It is recommended for receptions and gatherings of friends for gourmet food. For guests from overseas, the restaurant offers a drink menu in English and carefully explains seafood by showing a fishing ground map.     ずっと店の前を通る度に行ってみたいと思っていた店のひとつです。いわゆる“銀座の鮨”的な想像が良い形で裏切られる、夫婦で営まれているお店。鮨、つまみともに多種出てくるので此方側もある程度の準備は必要ですが、そのどれもが美味しい。最近の高級店では余り出さなくなった貝類もちゃんと含まれていて、妙な成金趣味が無いのも素晴らしい。その物腰の柔らかい接客にも感心させられました。

    握りもつまみも秀逸でした。大将のお人柄もよく、居心地も良かったです。極上の鮨の数々堪能しました。以前より小生の胃袋が小さくなっているようで、全て食べきれず大将には申し訳なかったです。食べきれなかった細巻は持ち帰りにしてもらいました。人気店なのも納得です。

    初来店です。 まず親方、奥様お店の方々の連携・雰囲気、大変素晴らしいです。 そして旅好きという話から繋がる素材への愛を感じる、調理・握り。 酒肴、止め椀、デザート含め19品プラス握り18貫の怒涛の品数で大満足でおなかいっぱいになりました! 素材を無駄にしない構成なのも個人的にはとても嬉しいし、美味しかったです。(特にツマの手巻き、追加で頼んだカッパ巻きは美味しすぎました。) そして、好きな食べ物欄に記載してあった青魚類といったことにも目を通され、それに合わせた仕入れが見受けられとても嬉しかったです。是非また来店させていただいきたいです。
